About the bean:
Juan Carlos Valerio has his farm located in the upper part of San Luis de Grecia, on the slopes of the Poas Volcano, where you can enjoy beautiful sunsets accompanied by a pleasantly cool climate and normally cold nights. Soils of volcanic origin with excellent topography, offer ideal conditions for the cultivation of coffee. For that reason, in 2010, Juan Carlos took the decision to start growing coffee, focusing on quality and sustainable production. The coffee with the mucilage is placed in African beds with a thickness of no more than 4 inches, starting the drying process of the mucilage, and reduction of the internal moisture of the coffee beans. The coffee is constantly moved manually, every 30 minutes, until it is dried, reaching a humidity of 10.5%. This process can take approximately 8-10 days.
